IT’S ALL ABOUT GOOD TASTE Every year, one or two new restaurants that open in Ibiza become the talk of the town for weeks and weeks and leave people in awe – from either ecstasy or simply surprise. As we know, food is sacred, but in this island it finds, as if by magic, a different expression and another disposition altogether.

In Ibiza appetites are different and the island knows how to take things – from food to nightlife – to another level. Everything starts when somebody tells you, almost as a secret, that he or she has received an ultra-VIP invitation to try the tasting menu at one place or another ahead of the official opening, before it becomes the restaurant to be seen at. X told me about her invitation a few weeks ago, while we were having an organic mango and ginger smoothie after a Pilates session in our favourite gym. Someone very important – apparently some investor in this new and iconic venture on the island – requested her presence, so that’s why she got the invitation. X is oneof the most beautiful women on the island. She was the former PR for one of the legendary clubs and today is a real lady whose glamour is remarked on wherever she goes. After the restaurant’s opening night, I heard rumours about how wonderful it was. I organised a small aperitif with X and she told me all the details about its delicate menu – a blend of Japanese tradition and Mediterranean cuisine with hints from the Spanish gastronomy. The beautiful X revealed some of the secrets from the restaurant, its theatrical edge, the beautiful shows, the staging of the dishes… And then I had the privilege to go. As is usually the case, my expectations were high, as everybody had told me about their experience and how much they had loved it. I went prepared for an inevitable win-win situation, yet without being conscious of just how powerfully this island can transfigure everything. All internationally renowned chefs know that in Ibiza restaurants are not only temples of the best culinary creations, but also places to celebrate life, where the spotlight plays with the shadows to weave new universes and where food is served in combination with fantastical shows of light and sound. The fabulous international clientele who come to these places are almost able to reinvent reality here. And, having thought that X was exaggerating, I surrendered to the evidence of my own eyes: it’s not that the island magnifies things; it actually transforms them radically. As I later told X, this new restaurant, having come into contact with the magical air of this island, has transformed into a show where eating and dancing are celebrated and the contorting of waiters and dishes captivate the mind and the palate – starting with my own. Ibiza, you really do know how to do it!
