Why did you changed the whole menu at Mariners?

We wanted to distance ourselves from the traditional fish and seafood fare served in most of the restaurants here. We wanted to give a bold twist to popular international dishes without forgetting Ibiza.


What are your star dishes?

The menu is a joint effort, created by the owner Luis Candel, my sous chefs Joaquin Soler and Judit Vignoles and myself. Some of the favourites are avocado cannelloni filled with king crab, pastry with foie and caramelised apples, and pork belly with pineapple bonbon.


And for dessert?


We have a vintage-style pastry trolley filled with truly delightful dishes such as creamy cheesecake with red berries and crunchy crumble and crème brulée foam with strawberries.
